Ingredients:

1 cucumber (sliced)

1 cup cherry tomatoes (halved)

1 small red onion (sliced)

1 yellow bell pepper (diced)

1/2 cup Kalamata olives

1 cup feta cheese (cubed)

2 tbsp fresh parsley (chopped)
Dressing:

2 tbsp lemon juice

3 tbsp olive oil

1 clove garlic (minced)

1 tsp salt

1/2 tsp black pepper

1 tsp dried oregano
Instructions:

Prep the vegetables: Slice the cucumber, halve the tomatoes, slice the onion, and dice the yellow bell pepper.

Combine: In a large salad bowl, toss together the cucumber, tomatoes, onion, bell pepper, olives, and feta cheese.
