Milk Brioche Rolls Recipe

Ingredients:
Dough:
  • 4 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet (2¼ tsp) active dry yeast
  • 1 cup warm skim milk
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp salt
Filling:
  • 1/4 cup sugar substitute
  • 1 tbsp ground cinnamon
  • 2 tbsp melted butter
Glaze:
  • 1 cup powdered sugar substitute
  • 2 tbsp skim milk
  • 1/2 tsp vanilla extract

Instructions:

  • Activate Yeast: Mix warm milk and a pinch of sugar. Sprinkle yeast on top and let sit 5–10 mins until foamy.
  • Make Dough: In a bowl, mix flour, sugar, butter, eggs, salt, and yeast mixture. Mix into a soft dough.
  • Knead: Knead for 8–10 mins until smooth. Place in greased bowl, cover, and let rise 1–2 hrs until doubled.
  • Fill & Roll: Roll dough into a rectangle. Brush with butter, sprinkle with cinnamon + sugar substitute.
  • Shape: Roll up, slice into 12 rolls. Place in greased dish, rise again for 30 mins.
  • Bake: Bake at 350°F (175°C) for 20–25 mins until golden.
  • Glaze: Mix glaze ingredients and drizzle over warm rolls.
