Ingredients:
2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
3 tablespoons olive oil
4 cloves garlic, minced
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped
1/4 teaspoon crushed red pepper flakes (optional)
Wooden skewers (soaked in water for 30 minutes)
Directions:
Prepare the Marinade:
In a large bowl, combine the olive oil, minced garlic, Parmesan cheese, salt, pepper, lemon juice, and crushed red pepper flakes (if using). Stir until the ingredients are well combined.
Marinate the Chicken:
Add the cubed chicken to the bowl and toss to coat with the marinade. Cover and refrigerate for at least 30 minutes to allow the chicken to absorb the flavors.
Skewer the Chicken:
Preheat your grill or grill pan to medium-high heat. Thread the marinated chicken cubes onto the soaked wooden skewers, making sure to leave a little space between each piece.
Grill the Chicken Skewers:
Place the chicken skewers on the grill and cook for 5-7 minutes on each side, or until the chicken is fully cooked and has an internal temperature of 165°F (75°C).
Serve:
Remove the skewers from the grill and garnish with fresh chopped parsley. Serve the garlic Parmesan chicken skewers with your favorite sides or dipping sauces.
