- 1 lb shrimp, peeled and deveined
- 4 small red potatoes, quartered
- 2 ears corn, cut into thirds
- 1/2 lb smoked sausage, sliced
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
- Preheat oven to 400°F (200°C) or heat grill to medium-high.
- Combine shrimp, potatoes, corn, and sausage in a large bowl.
- Drizzle with olive oil and season with Cajun seasoning, garlic, salt, and pepper. Toss to coat.
- Divide the mixture among foil sheets, seal tightly into packets.
- Cook in the oven (25–30 minutes) or grill (20–25 minutes), turning once.
- Open packs carefully, garnish with parsley, and serve with lemon wedges.
