Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 small red potatoes, quartered
  • 2 ears corn, cut into thirds
  • 1/2 lb smoked sausage, sliced
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  • Preheat oven to 400°F (200°C) or heat grill to medium-high.
  • Combine shrimp, potatoes, corn, and sausage in a large bowl.
  • Drizzle with olive oil and season with Cajun seasoning, garlic, salt, and pepper. Toss to coat.
  • Divide the mixture among foil sheets, seal tightly into packets.
  • Cook in the oven (25–30 minutes) or grill (20–25 minutes), turning once.
  • Open packs carefully, garnish with parsley, and serve with lemon wedges.
