Stuffed Bell Peppers

6 medium green bell peppers (you can also use red, yellow, or orange for variety)

1 lb ground beef (substitute with ground turkey or chicken if preferred)

1 medium onion, chopped

1 (6.8 oz) box of Rice-a-Roni Spanish flavor (or another flavored rice mix)

2 cups water (or as directed on the rice box)

1 cup tomato sauce (optional, for topping)

1 cup shredded cheese (optional, for topping)

Instructions:

1. Prepare the Bell Peppers:

Slice the tops off the peppers and remove seeds and membranes.

Bring a large pot of water to a boil and parboil the peppers for 3-5 minutes. Drain and set aside.

2. Cook the Rice:

In a skillet, prepare the Rice-a-Roni according to the package instructions. Set aside once cooked.

3. Prepare the Filling:

In the same skillet, sauté the chopped onion until soft.

Add the ground beef, cooking until browned and fully cooked. Drain excess grease.

Mix the cooked rice into the beef and onion mixture. Season with salt and pepper if needed.

4. Stuff the Peppers:

Preheat your oven to 375°F (190°C).

Fill each bell pepper with the beef and rice mixture, pressing down slightly to pack the filling.

Arrange the peppers in a baking dish.

5. Add Toppings (Optional):

Spoon a bit of tomato sauce over the top of each pepper.

Sprinkle shredded cheese on top if desired.

6. Bake:

Cover the dish with foil and bake for 25-30 minutes.

Remove the foil and bake for an additional 5-10 minutes until the peppers are tender and the cheese is melted.
