Ingredients:
2 medium sweet potatoes
1 cup canned black beans, rinsed and drained
½ teaspoon cumin
½ teaspoon smoked paprika
Salt and black pepper to taste
½ avocado, diced
¼ cup diced red onion
¼ cup chopped tomatoes or salsa
Fresh lime juice (to taste)
Chopped cilantro (for garnish)
Optional: hot sauce, crumbled feta, or Greek yogurt
Instructions:
1️⃣ Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake on a tray for 40–45 minutes until soft.
2️⃣ While baking, warm black beans in a skillet with cumin, paprika, salt, and pepper.
3️⃣ Once sweet potatoes are done, slice open lengthwise and fluff the insides slightly with a fork.
4️⃣ Fill each with seasoned black beans, avocado, onion, and tomatoes or salsa.
5️⃣ Drizzle with lime juice, garnish with cilantro, and add any extras you like.
