Instructions:
Cook the Meat and Vegetables:
In a large skillet, cook the ground beef or turkey over medium heat until browned and cooked through. Add the diced onion, minced garlic, and diced bell pepper to the skillet and cook for an additional 3-4 minutes, until the vegetables are tender.
Add Beans, Tomatoes, and Spices:
Stir in the drained black beans, diced tomatoes, low-sodium beef broth, chili powder, ground cumin, paprika, salt, and pepper. Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the flavors to meld together and the liquid to reduce slightly.
Prepare the Burritos:
Preheat your oven to 375°F (190°C). Warm the tortillas in the microwave for a few seconds to make them pliable. Place a generous scoop of the meat and bean mixture onto each tortilla, then sprinkle with shredded cheese. Roll up the tortillas, tucking in the sides, to form burritos.
Assemble and Bake:
Place the assembled burritos seam side down in a baking dish. If desired, sprinkle additional cheese on top of the burritos. Cover the dish with foil and bake in the preheated oven for 15-20 minutes, or until the burritos are heated through and the cheese is melted and bubbly.
Serve:
Remove the foil from the baking dish and garnish the burritos with chopped fresh cilantro. Serve the burritos hot with sliced avocado, sour cream or Greek yogurt on the side, if desired.
