Flavor-packed bowls loaded with juicy spiced chicken, rice, beans, veggies, and all your favorite toppings — totally customizable and super satisfying!
Ingredients:
For the Chicken:
1 lb (450g) boneless, skinless chicken breasts or thighs
1 tbsp olive oil
1 tsp chili powder
1 tsp cumin
½ tsp paprika
½ tsp garlic powder
½ tsp onion powder
Salt & pepper to taste
Juice of 1 lime (optional, for extra zest)
For the Bowls:
2 cups cooked rice (white, brown, or cilantro-lime)
1 cup canned black beans, rinsed and drained
1 cup corn (canned, fresh, or grilled)
1 cup cherry tomatoes, halved
1 avocado, sliced or cubed
¼ cup chopped red onion
Fresh cilantro, chopped
Lime wedges for serving
Optional Toppings:
Sour cream or Greek yogurt
Shredded cheese
Salsa or pico de gallo
Jalapeño slices
Hot sauce
Instructions:
Cook the Chicken
In a bowl, toss chicken with olive oil and seasonings. Heat a skillet over medium heat and cook chicken 5–6 minutes per side (depending on thickness) until fully cooked and browned. Let rest for 5 minutes, then slice.
Assemble the Bowls
Start with a base of rice. Top with sliced chicken, beans, corn, tomatoes, avocado, red onion, and any other toppings you love.
Finish & Serve
Garnish with fresh cilantro and a squeeze of lime. Drizzle with salsa or a dollop of sour cream if desired.
