2 cups mashed potatoes (leftover or freshly made)
1 egg, beaten
1/3 cup all-purpose flour (plus extra for dusting)
1/4 cup chopped green onions (optional)

Salt and pepper to taste
2 tbsp butter or oil for frying
Instructions:
Prep the mixture:
