π Delicious Cherry Cheesecake Chimichangas
π Ingredients (Makes 6):
6 flour tortillas (8-inch size)
8 oz (225g) cream cheese, softened
ΒΌ cup sour cream
β cup granulated sugar
1 tsp vanilla extract
1 cup cherry pie filling (store-bought or homemade)
1 tsp cinnamon (optional, for dusting)
Β½ cup granulated sugar (for coating)
Oil for frying (vegetable or canola)
π₯£ Instructions:
Make the filling:
In a bowl, mix cream cheese, sour cream, β
cup sugar, and vanilla until smooth and creamy.
Assemble chimichangas:
Spread 2β3 tablespoons of cheesecake mixture in the center of each tortilla.
Add 1β2 tablespoons of cherry pie filling on top.
Fold sides in, then roll up tightly like a burrito. Secure with a toothpick if needed.
Fry:
Heat about 1 inch of oil in a skillet over medium heat.
Fry chimichangas until golden brown on all sides (about 2β3 minutes per side).
Remove and drain on paper towels.
Coat in sugar:
Mix Β½ cup sugar with cinnamon (if using).
Roll warm chimichangas in the cinnamon sugar mixture.
Serve:
Let cool slightly and enjoy warm. Optional: serve with whipped cream or vanilla ice cream.
β Tips:
Use air fryer at 400Β°F (200Β°C) for 6β8 mins for a lighter version (spray with oil first).
You can swap cherry for blueberry, strawberry, or even Nutella and banana!
