I’ve loved this bean salad for years, but figured out the pts today. It makes 8 cups of salad, 4 pts per 1 cup serving, or 2 pts per half cup serving if you’re having it as a side to another meal.
3 Bean Salad:
1 can cannellini beans, rinsed and drained
1 can red kidney beans, rinsed and drained
1 can garbanzo beans (chick peas), rinsed and drained
1/2 red onion, sliced and soaked
2 stalks celery, chopped
1 cup fresh parsley, chopped
1 teaspoon fresh rosemary, chopped
Dressing:
1/3 cup Apple Cider Vinegar
1/4 cup sugar (I always sub with raw honey)
3 Tablespoons Olive Oil
1/2 teaspoon pink salt
1/4 teaspoon ground pepper
Mix, chill, serve.
