Baked Apple Cottage Cheese Casserole
Ingredients
1 cup (250 g) cottage cheese or ricotta
1 medium apple, peeled and diced
1 egg
2–3 tbsp sugar or honey
1 tsp vanilla extract
1–2 tbsp semolina or flour (optional, for firmness)
1 tbsp butter (for sautéing the apples)
½ tsp cinnamon
A pinch of salt
Instructions
Prepare the apples
Heat a small pan with butter.
Add the diced apple, sprinkle with cinnamon and 1 tsp sugar/honey.
Sauté for 3–4 minutes until slightly soft (don’t overcook).
Make the cheese mixture
In a bowl, mix cottage cheese, egg, remaining sugar/honey, vanilla, and semolina/flour if using.
Stir until combined (you can mash lightly for a smoother texture).
Assemble
Pour the cheese mixture into a greased ramekin or small baking dish.
Spoon the sautéed apples over the top.
Optionally sprinkle a little more cinnamon.
Bake
Bake at 180°C (350°F) for 20–25 minutes, until golden and slightly puffed.
Serve
