This fiber-rich veggie soup helps support healthy blood sugar and digestionāsimple, filling, and budget-friendly!

2 medium potatoes, peeled and diced
1 large carrot, sliced
1 bell pepper (any color), chopped
½ head of cabbage, shredded or chopped
2 celery stalks, chopped
6 cups water or vegetable broth
Salt to taste
Optional: garlic, parsley, bay leaf, or a pinch of black pepper for flavor
š² Instructions:
Prep all vegetables. Wash and chop everything into bite-sized pieces.
In a large pot, bring the water or broth to a boil.
Add potatoes, carrot, and celery first. Let simmer for 10 minutes.
Add bell pepper and cabbage, plus any optional herbs or seasoning.
Simmer for another 20ā25 minutes until all vegetables are tender.
Taste and adjust salt. Serve hot!
