Ingredients

  • 2 cups all-purpose flour, packed (if using self-rising flour, omit baking powder and salt)
  • 1 Tbsp baking powder (leave out if using self-rising flour)
  • ½ tsp salt (leave out if using self-rising flour)
  • ½ cup butter, salted, cut in small pieces (if using unsalted, add ¼ tsp more salt)
  • 1 cup milk (regular or buttermilk)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine flour, baking powder, and salt. Add butter in small pieces.
  3. Using your hands or a pastry blender, mix the flour and butter until the butter is pea-sized and the mixture is crumbly.
  4. Pour in milk and mix gently with a wooden spoon until well incorporated. Avoid overmixing.
  5. Turn the dough onto a floured surface and roll it out to about ¾ inch thickness.
  6. Use a biscuit cutter or cookie cutter to cut out biscuits and place them on an ungreased cookie sheet or iron skillet. Ensure the biscuits touch each other for a better rise during baking.
  7. Bake for 10 minutes or until golden brown.
