A smoothie with everything going for it—it’s packed protein from powdered peanut butter and tofu, and gives you a serving of fruit (the cherries) and vegetables (the cauliflower rice) in one serving. And on top of it all, it has chocolate! Why blend all the smoothie ingredients together when you can make layers instead? Make the smoothie base, and pour half of it between two glasses. Blend the cocoa powder into the remaining smoothie, and top of the glasses. Use sour cherries if you can’t find dark cherries.
Ingredients:
Frozen unsweetened dark sweet cherries – 1½ cup(s)
Uncooked cauliflower rice – 1 cup(s), frozen
Plain unsweetened almond milk – 1 cup(s)
Unsweetened powdered almond butter – ¼ cup(s)
Almond extract – ¼ tsp
Firm tofu – 3 oz
Unsweetened cocoa powder – 3 Tbsp
Instructions:
- In blender, combine all ingredients, except for cocoa powder, and blend on high speed until smooth, 30 seconds to 1 minute. Divide half of smoothie between 2 pint glasses. Add cocoa powder to remaining smoothie in blender and blend until cocoa is incorporated, about 30 seconds. Dividing equally, gently pour chocolate smoothie on top of almond-cherry smoothie in glasses so 2 layers form.
