– 1 cup breadcrumbs

– 1 tablespoon Dijon mustard
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 cup ketchup (for the glaze)
– 2 tablespoons brown sugar (for the glaze)
– 1 tablespoon apple cider vinegar (for the glaze)
**For the Roasted Potatoes:**
– 1 1/2 lbs baby potatoes, halved
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon dried thyme
– Salt and pepper, to taste
– Fresh parsley, chopped (for garnish)
Instructions:
1. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C).
2. **Prepare the Meatloaf:**
– In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, milk, egg, Worcestershire sauce, Dijon mustard, dried oregano, salt, and pepper. Mix until just combined, being careful not to overwork the meat.
– Shape the mixture into a loaf and place it on a baking sheet or in a loaf pan.
3. **Make the Glaze:**
– In a small bowl, mix together the ketchup, brown sugar, and apple cider vinegar.
– Spread half of the glaze over the top of the meatloaf.
