🥪 Creamed Chipped Beef on Toast

6 oz dried chipped beef (e.g., Buddig or Armour – rinsed & chopped)

1 1/2 cups unsweetened almond milk (or skim milk – adjust points)

1/4 tsp black pepper

Optional: pinch of garlic powder or onion powder

4 slices light bread, toasted (e.g., Sara Lee Delightful or similar)

Rinse & prep the beef:
Rinse dried beef in warm water to reduce sodium. Pat dry and slice into bite-sized pieces. -
Make the roux:
In a skillet over medium heat, melt the light butter. Stir in flour and cook, stirring constantly, for 1 minute to form a roux. -
Add milk & thicken:
Slowly whisk in almond or skim milk. Stir until smooth and thickened, about 3–5 minutes. -
Combine & season:
Add the chopped beef and pepper. Include garlic/onion powder if using. Simmer for another 2–3 minutes. -
Serve over toast:
Spoon hot creamed beef mixture evenly over each slice of toasted light bread. Serve immediately.
