Sweet Apple Waldorf Salad
Makes ~6 servings
Estimated WW Points (2024 Plan): 4–5 points per serving
✅ Ingredients:
-
2 medium apples, chopped (any sweet variety like Fuji or Honeycrisp; leave skin on for fiber)
-
1/2 cup red or green seedless grapes, halved
-
1/2 cup celery, finely chopped
-
1/4 cup walnuts, roughly chopped (can sub with pecans or almonds if preferred)
-
1/2 cup nonfat plain Greek yogurt
-
1 tbsp light mayonnaise
-
1 tsp lemon juice (to keep apples from browning and add brightness)
-
Optional sweetener (if needed):
-
1–2 tsp honey or maple syrup (adds points)
-
A few raisins or dried cranberries (adds points)
-
Dash of cinnamon for warm flavor (0 points)
-
🥣 Instructions:
-
In a medium bowl, whisk together the Greek yogurt, light mayonnaise, and lemon juice until smooth and well combined.
-
Add the chopped apples, grapes, celery, and walnuts to the bowl.
-
Gently fold everything together until coated evenly in the creamy dressing.
-
Cover and refrigerate for at least 30 minutes before serving. This allows the flavors to meld and gives it that perfect chilled crunch.
-
Taste before serving — add a drizzle of honey if your apples aren’t sweet enough.
-
Serve on its own, over greens, or with grilled chicken for a light lunch!
