Creamy Cucumber Bacon Bites snack that’s crunchy, creamy, and totally craveable:
🥒🧀 Creamy Cucumber Bacon Bites
🧂 Ingredients:
1 large cucumber (English or regular)
4 oz (113g) cream cheese, softened
2 tbsp sour cream or Greek yogurt (optional, for creamier texture)
1/2 cup shredded sharp cheddar cheese
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and pepper to taste
2 tbsp chopped chives or green onions
6 strips of crispy cooked bacon, crumbled
Paprika or everything bagel seasoning (optional garnish)
🔪 Instructions:
Prep the cucumber:
Wash and peel the cucumber if desired.
Slice into 1/2-inch thick rounds.
Using a small spoon or melon baller, gently scoop out a small divot in the center of each slice (don’t go all the way through). This creates a little “cup” for the filling.
Make the filling:
In a bowl, mix cream cheese, sour cream (if using), cheddar cheese, garlic powder, onion powder, salt, and pepper.
Stir in half of the crumbled bacon and most of the chopped chives (save some for topping).
Assemble the bites:
Spoon or pipe the filling into the cucumber cups.
Top each bite with a sprinkle of remaining bacon and chives.
Optional: dust with a pinch of paprika or everything bagel seasoning for an extra flavor kick.
Chill and serve:
Refrigerate for 15–30 minutes for best flavor and firmness.
Serve cold as a refreshing, savory snack or appetizer.
🧡 Pro Tips:
Want more heat? Add a dash of hot sauce or mix in diced jalapeños.
Not a fan of bacon? Try chopped smoked almonds or sun-dried tomatoes for a vegetarian version.
