Easy Mexican pizza Recipe

Made homemade “Mexican Pizza” from the recipe in the app. Mine was four pts Soooo good! Tasted pretty much like the one from Taco Bell!

Our version of this beloved fast food option starts with corn tortillas that are toasted until crisp, then sandwiches refried beans between them . On top goes a combo of pizza sauce and Mexican-style cheese blend. It’s just as delicious as its less-healthy counterpart.

Cooking spray

Corn tortilla (mission yellow)
2 medium
Reduced sodium taco seasoning
1 Tbsp
Fat free refried beans
1 cup(s), warmed
Store-bought pizza sauce
¼ cup(s)
Fat free salsa
¼ cup(s)
Shredded fat free Mexican-style cheese
1/2 cup(s)
Tomato
½ cup(s), chopped
Scallions
2 Tbsp, thinly sliced (optional)

Instructions:

Preheat the oven to 400°F. Line a large sheet pan with foil. Arrange 2 tortillas on the pan; coat both sides with cooking spray. Bake until browned and crisp, 8 to 10 minutes, flipping the tortillas and rotating the pan halfway through.

Meanwhile, coat a small nonstick skillet with cooking spray and heat over medium. Stir in the taco seasoning and ¼ cup water; cook until the sauce thickens, about 1 minute. In a small bowl, stir together the pizza sauce and salsa.

Heat the broiler to high. Spread ¼ cup refried beans onto each of 2 tortillas; top . Top each with another tortilla. Spread 2 tbsp salsa mixture over each top tortilla; sprinkle each with cheese. Arrange the tortilla stack on the pan. Broil until the cheese melts, 1 to 2 minutes. Sprinkle the tomatoes and scallions, if desired, on top.
