Ingredients

  • 2 English muffins split in half
  • 4 large eggs
  • 1/4 cup milk
  • Salt and black pepper to taste
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup diced bell peppers any color
  • 1/2 cup cooked and crumbled bacon about 4-6 slices
  • 1/4 cup cherry tomatoes halved
  • Fresh basil or parsley chopped (for garnish, optional)

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Muffins: Place the English muffin halves on a baking sheet, cut side up.
  • Whisk the Eggs: In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  • Cook the Eggs: In a skillet over medium heat, scramble the egg mixture until just set but still slightly runny (the eggs will finish cooking in the oven).
