1/2 avocado, sliced
1/2 cup cucumber slices
1/2 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
2 cups fresh arugula
1 tablespoon olive oil
1 tablespoon balsamic glaze
Fresh dill and parsley, chopped
1 lemon wedge
Salt and pepper to taste
Preparation Steps:
Grill the salmon: Preheat your grill to medium heat. Drizzle the salmon with olive oil and season with salt, pepper, and fresh herbs (dill and parsley). Grill the salmon for 4-5 minutes per side until fully cooked and lightly charred. Set aside.
Prepare the salad: In a large bowl, layer the arugula as the base, then add the cucumber slices, cherry tomatoes, red onion, and avocado slices.
Add the salmon: Place the grilled salmon on top of the salad.
Dress the salad: Drizzle with olive oil and balsamic glaze. Squeeze a lemon wedge over the salmon for a zesty finish.
Season and serve: Add salt and pepper to taste, garnish with more fresh herbs, and enjoy!
You can add other toppings like hard-boiled egg for extra protein.
