GRILLED SALMON & AVOCADO SALAD

1 salmon fillet (about 6 oz)

1/2 avocado, sliced 🥑
1/2 cup cucumber slices 🥒
1/2 cup cherry tomatoes, halved 🍅
1/4 red onion, thinly sliced 🧅
2 cups fresh arugula 🥬
1 tablespoon olive oil 🫒
1 tablespoon balsamic glaze 🧴
Fresh dill and parsley, chopped 🌿
1 lemon wedge 🍋
Salt and pepper to taste 🧂

🍳 Preparation Steps:

🍣 Grill the salmon: Preheat your grill to medium heat. Drizzle the salmon with olive oil and season with salt, pepper, and fresh herbs (dill and parsley). Grill the salmon for 4-5 minutes per side until fully cooked and lightly charred. Set aside.
🥗 Prepare the salad: In a large bowl, layer the arugula as the base, then add the cucumber slices, cherry tomatoes, red onion, and avocado slices.
🍋 Add the salmon: Place the grilled salmon on top of the salad.
🧴 Dress the salad: Drizzle with olive oil and balsamic glaze. Squeeze a lemon wedge over the salmon for a zesty finish.
🧂 Season and serve: Add salt and pepper to taste, garnish with more fresh herbs, and enjoy!
You can add other toppings like hard-boiled egg for extra protein.
For a different flavor, try marinating the salmon in a mix of lemon  juice, garlic, and olive oil before grilling.
