2 eggs

1 cup non-fat plain Greek yogurt

1/4 cup unsweetened applesauce

1/4 cup zero-calorie sweetener (e.g., monk fruit, stevia blend)

1 tsp vanilla extract

1 cup fresh or frozen blueberries (if frozen, do not thaw)
