Ingredients:
- 1 lb lean ground beef (at least 93% lean)
- 1 package taco seasoning (choose a low-sodium option)
- 2/3 cup water
- Chili cheese-flavored baked tortilla chips (choose a lower-fat and lower-sugar option)
- 1/2 can (about 7 ounces) reduced-fat cheddar cheese soup
Instructions:
- Preheat the oven to 350°F (175°C). Grease a baking dish (9×13 inches) with cooking spray.
- In a skillet over medium heat, brown the lean ground beef until fully cooked. Drain any excess fat.
- Add the taco seasoning and water to the skillet. Stir well and let it simmer for a few minutes until the mixture thickens.
- Crush the chili cheese-flavored baked tortilla chips and spread them evenly on the bottom of the prepared baking dish.
- Spoon the cooked ground beef mixture over the crushed chips.
- In a small saucepan, heat the cheddar cheese soup over low heat until it’s smooth and pourable. You can add a little water to reach the desired consistency if needed.
- Drizzle the cheddar cheese soup over the ground beef layer.
- Bake in the preheated oven for about 15-20 minutes or until the dish is heated through.
- Remove from the oven and let it cool slightly before serving.
