Heavenly Chicken & Mushroom Pasta in Decadent Cream Sauce

Ingredients:

2 boneless chicken breasts, cut into strips
1 cup mushrooms, sliced
2 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 tsp dried thyme
2 cups cooked penne pasta
Salt and pepper to taste
Directions:

Heat olive oil and butter in a large skillet over medium heat.
Add the chicken strips and cook until browned on both sides, about 6 minutes. Remove from the skillet and set aside.
In the same skillet, sauté garlic for 1 minute before adding the mushrooms. Cook for 5 minutes until they soften.
Pour in the chicken broth and heavy cream, stirring to combine. Simmer for 4-5 minutes to thicken.
Stir in Parmesan cheese, dried thyme, salt, and pepper.
Add the cooked penne pasta and mix well to coat in the creamy sauce.
Return the cooked chicken to the skillet, tossing everything together.
Serve hot, garnished with extra Parmesan
