Ingredients Of keto Lemon Bars
To Get Crust
6 tablespoons of butter
2 cups of ground almonds
1/3 cup of sugar, skip
1 tablespoon of fresh lemon zest
For Filling
1/2 stick butter
1/2 cup deviate
1/2 cup fresh lemon juice
1/4 cup lemon zest 6 egg yolks
1/2 tsp xanthan gum
2 tbsp of collagen powder that has no flavour

How Keto Lemon Bars Are Made
Set the oven temperature to 350 degrees. Melt the butter in a small saucepan or the microwave. Add lemon zest, almond flour, and a sweetener. Stirring until everything is well mixed.
Press the dough evenly on the bottom and up the sides of an 8-inch square pan by half an inch. Line the pan with parchment paper for the best results. Bake for 10 minutes. Take out and set aside to cool while you make the filling.
For Filling
- Melt the butter in a small saucepan over low heat. Take the saucepan off the heat and stir in the sweetener, lemon juice, and lemon zest until everything is dissolved.
- Add the egg yolks, and then put the pot back on the stove over low heat.
- Whisk the curd all the time until it starts to get thicker. Take the mixture off the heat and strain it into a small bowl. Mix in the xanthan gum and collagen powder, or you can use gelatin instead, until they are smooth and the powder is dissolved.
- Pour the filling on top of the prepared crust and spread it out evenly to the edges of the pan.
- Whip the egg whites. add some stevia and another layer… It’s up to you.
- Bake the bars for 15 minutes at 350°F. take off and let cool. Before serving, sprinkle the swerve powder on top. Divide into squares.
