  • 1 large eggplant, cut into 1/4 inch slices
  • 1 tablespoon coarse salt
  • 3 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 cup pizza sauce
  • Cooked beef or chicken
  • 1 cup shredded mozzarella cheese


  1. Begin by preparing the eggplant. Sprinkle the coarse salt over the slices and allow them to sit on paper towels for 10-15 minutes. Once the time is up, wipe the slices dry.
  2. Preheat your oven to 400F. In a small bowl, mix together the minced garlic, olive oil, and Italian seasoning. Brush the mixture onto both sides of the eggplant slices and bake for 15 minutes.
  3. Once the eggplant is cooked, remove it from the oven and flip the slices over. Spread a tablespoon of marinara sauce onto each slice, followed by your choice of cooked beef or chicken. Sprinkle the shredded mozzarella cheese on top.
