Ingredients:
4 cod fillets
2 lemons (1 for juice, 1 for slices)
1/4 cup butter
1/4 cup olive oil
2 cloves garlic, minced
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
For Mashed Potatoes:
4 large potatoes, peeled and cubed
1/2 cup milk
1/4 cup butter
Salt and pepper to taste
Instructions:
Cook Potatoes: In a large pot, bring water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot.
Mash Potatoes: Add milk, butter, salt, and pepper to the potatoes. Mash until smooth and creamy. Set aside and keep warm.
Prepare Cod: Season the cod fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
Sear Cod: Add the cod fillets to the skillet and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
Make Sauce: In the same skillet, add butter and minced garlic. Sauté for 1-2 minutes until fragrant. Add lemon juice and stir to combine.
Combine: Return the cod fillets to the skillet and spoon the lemon garlic butter sauce over the top. Cook for an additional 1-2 minutes.
Serve: Plate the mashed potatoes and top with the seared cod fillets. Spoon extra sauce over the fish. Garnish with fresh parsley and lemon slices.
