Ingredients:
– 1 pound ground beef
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1/2 cup breadcrumbs
– 1/4 cup milk
– 1 egg
– 1 teaspoon salt
– 1/2 teaspoon pepper
– 2 cups mashed potatoes
– 1 cup shredded cheddar cheese
– 1/4 cup chopped green onions
– 1/4 cup bacon bits
Instructions:
1. Preheat the oven to 375°F and grease a 9×13 inch baking dish.
2. In a large bowl, mix together the ground beef, onion, garlic, breadcrumbs, milk, egg, salt, and pepper. Press the mixture into the bottom of the prepared baking dish.
3. Spread the mashed potatoes over the meat mixture, then sprinkle with cheddar cheese, green onions, and bacon bits.
4. Bake for 30 minutes, or until the meatloaf is cooked through and the cheese is melted and bubbly.
5. Let cool for a few minutes before serving. Enjoy!
