Pepperoni Pizza Quesadilla
Ingredients
4 flour tortillas (medium or large)
1½–2 cups shredded mozzarella cheese
½ cup pepperoni slices
½ cup pizza or marinara sauce (plus more for dipping)
1–2 tbsp olive oil or butter
Optional: Italian seasoning, garlic powder, crushed red pepper, fresh parsley
Instructions
Heat the pan
Place a large skillet over medium heat and lightly grease with oil or butter.
Assemble
Lay one tortilla in the pan.
Sprinkle a layer of mozzarella cheese.
Add pepperoni slices evenly.
Spoon a little pizza sauce over the top (don’t overdo it).
Sprinkle Italian seasoning or garlic powder if using.
Add another light layer of cheese and top with a second tortilla.
Cook
Cook for 2–3 minutes until the bottom is golden and crispy.
Flip carefully
Flip the quesadilla and cook another 2–3 minutes until the cheese is fully melted and the tortilla is browned.
Repeat
Make the remaining quesadilla(s).
Slice & serve
Cut into wedges and serve with warm marinara or pizza sauce for dipping.
