Skinny Bacon Ranch Chicken Bake

There’s just something comforting about a homemade casserole and this Skinny Bacon Ranch Chicken Bake has all of the best flavors-chicken, creamy cream cheese mixed with green onions, ranch, and bacon! It’s naturally gluten-free, low carb, and makes for the tastiest weekday dinner!

Ingredients

  • 4 ( 4 oz.) boneless, skinless chicken breasts, thin cut
  • Salt and black pepper, to taste
  • 5 oz. reduced fat cream cheese softened
  • 3 Tbsp light mayo or non fat plain Greek yogurt
  • 6 slices precooked or center cut bacon, cooked and crumbled
  • 3 green onions, chopped
  • 1 cup reduced fat or fat free cheddar cheese, shredded, divided
  • 1 Tbsp Hidden Valley ranch dry mix powder

Instructions

      1. Preheat the oven to 350˚degrees.
      2. In a medium-sized mixing bowl, mix the softened light cream cheese and light mayo until smooth.
      3. Stir in bacon crumbles, green onion,  1/2 cup of the reduced-fat cheddar cheese, and ranch powder together until combined.
      4. Spray a 3-quart baking dish with nonstick cooking spray.
      5. Season chicken breast with salt and pepper. Lay chicken breasts in a prepared baking dish.
      6. Spread the cheese mixture over the chicken breasts. Top with remaining cheddar cheese.
      7. Bake uncovered for 30-40 minutes or until chicken is cooked through or until it reaches 165˚degrees internal temperature.
      8. Garnish with additional bacon and green onions, if desired.
      9. Store leftovers in an airtight container for up to 4 days in the fridge.
