Easy Lasagna with Oven Ready Lasagna Noodles

This Easy Beef Lasagna is made with oven ready lasagna noodles -which means NO PRE-BOILING!  I’ve been making this recipe for years and everyone agrees–this Easy Beef Lasagna recipe makes for the best tasting lasagna!

Ingredients

  • 1 lb. 96% lean ground beef or Jennie O’ Italian turkey sausage
  • 1/2 medium onion, diced
  • 1 Tbsp garlic, minced
  • 12 Barilla oven ready lasagna noodles or gluten-free oven ready lasagna noodles
  • 2 eggs, beaten
  • 1 (16 oz.) container fat free cottage cheese, blended in a food processor or blender
  • 1 1/2 cups shredded light mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 6 cups zero point marinara sauce* see recipe link for recipe on post or 2 (24 oz.) jars no added sugar spaghetti sauce
  • Fresh basil or parsley, for garnish.

Instructions

      1. Preheat oven to 375 degrees.
      2. In a large skillet or dutch oven, brown lean ground beef or turkey sausage, onion, and garlic over medium-high heat until no pink remains. Drain excess fat, if needed.
      3. Add marinara sauce to the cooked meat. Stir until well combined. Set aside.
      4. In large mixing bowl, combine beaten eggs, blended cottage cheese and 1/2 cup of the mozzarella cheese and parmesan. Set aside.
      5. In a 13×9 baking pan, spread 1 cup of sauce on bottom of pan.
      6. Layer in the order, 4 uncooked lasagna noodles (it’s okay if they overlap), then 1/3 part of the cheese mixture, half the cooked meat, and 1 cup of spaghetti sauce.
      7. Continue to the layer, using 4 uncooked lasagna noodles, 1/3 part of the cheese mixture, and 1 cup sauce. For the top layer add the remaining 1 cup mozzarella.
      8. Bake covered with foil for 50-60 minutes.
      9. Uncover and continue cooking until all the cheese is melted on the top for about 5 minutes.
      10. Garnish with chopped fresh basil or parsley, if desired.
      11. Let sit for 10 minutes before serving.

Makes 8 ( 1/8th of baking dish) servings
