INGREDIENTS:

1 tbsp white wine vinegar

¾ cup chicken broth

2 tbsp soy sauce
-
2 tbsp artificial sweetener
-
½ tsp ground ginger
-
2 tbsp cornstarch
-
2 tsp olive oil
-
2 tsp garlic minced
-
2 medium scallion chopped
-
½ tsp red pepper flakes
-
1 lb boneless skinless chicken breast cut into 2 inch pieces

2 cups cooked brown rice
INSTRUCTIONS:

Using a small mixing bowl, combine vinegar, chicken broth, soy sauce, sweetener, ginger, and corn starch. Mix well. Set aside.

In a wok, or skillet, heat oil over medium-high heat.

In the skillet or wok, add garlic, red pepper flakes, and scallions. Stir-fry approx 2 minutes. Add in chicken. Cook until the chicken is browned approx 5 additional minutes.

Mix in the prepared sauce. Simmer until chicken is fully cooked, and the sauce thickens. Approx 3 additional minutes.

Serve over cooked brown rice.
