Hearty, colorful, and full of flavor — a dinner-time favorite!
Ingredients:
4 large bell peppers (any color — tops cut off, seeds removed)
1 lb ground beef or turkey
1 small onion, finely chopped
2 cloves garlic, minced
1 cup cooked rice (white or brown)
1 can (14.5 oz) diced tomatoes (drained slightly)
1 tsp Italian seasoning
½ tsp salt
½ tsp pepper
1 cup shredded cheese (cheddar, mozzarella, or a blend)
Optional: chopped parsley or basil for garnish
Optional: a splash of tomato sauce or marinara on top before baking
Instructions:
Preheat oven to 375°F (190°C).
Prepare the peppers:
Bring a large pot of water to a boil. Boil peppers for 3–5 minutes to soften slightly. Remove and set upside down to drain.
Cook the filling:
In a skillet over medium heat, cook the ground meat until browned. Add onion and garlic; cook until softened. Stir in cooked rice, tomatoes, Italian seasoning, salt, and pepper. Let simmer for 5 minutes.
Stuff the peppers:
Place peppers upright in a baking dish. Spoon the filling into each pepper. Top with shredded cheese.
Bake:
Cover the dish with foil and bake for 25 minutes. Remove foil and bake another 10 minutes, until the cheese is melted and bubbly.
Garnish & serve:
Sprinkle with fresh herbs and serve warm!

Low-carb? Swap rice for cauliflower rice.
Vegetarian? Use black beans and corn instead of meat.
Extra saucy? Add marinara or enchilada sauce inside or over the top.
