Sweet Chili Garlic Chicken Stir Fry
Ingredients
For the Chicken Stir Fry
500g chicken breast, thinly sliced
2 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup broccoli florets
1 medium carrot, julienned
3 cloves garlic, minced
1 small onion, sliced
2 green onions, chopped (for garnish)
For the Sweet Chili Garlic Sauce
1/4 cup sweet chili sauce
2 tbsp soy sauce (or tamari for gluten-free)
1 tbsp rice vinegar
1 tsp sesame oil
1/2 tsp crushed red pepper flakes (optional)
For Serving
Cooked jasmine rice, brown rice, or noodles
Sesame seeds for garnish
Directions
In a small bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, and red pepper flakes. Set aside.
Heat olive oil in a large skillet or wok over medium-high heat.
Add chicken slices and cook until golden and cooked through, about 5–6 minutes. Remove chicken and set aside.
In the same skillet, sauté garlic and onion for 1–2 minutes until fragrant.
Add bell peppers, broccoli, and carrots. Stir-fry for 4–5 minutes until vegetables are tender-crisp.
Return chicken to the skillet and pour the sweet chili garlic sauce over the mixture. Toss to coat evenly.
Cook for another 2 minutes until everything is heated through.
Serve over rice or noodles and garnish with chopped green onions and sesame seeds.
