I just made the best Sweet Pepper Cucumber Salad and had to share the recipe with you! It’s a great way to get veggies in and adds a dose of happy color to your day. Add whatever spices you like, and then enjoy that it tastes like Chinese food without all the points!

It’s basically that internet-famous cucumber-pepper salad, just tweaked for Weight Watchers.

The seeds in the everything bagel seasoning, snappy veggies, and chili oil all lend major crunch! It’s a very satisfying salad to nosh on.

Serves 1

Notes: you can also use this special dressing, Open Nature Dressing in Asian Sesame Ginger. It has just 2  points for two tablespoons of the dressing!

Ingredients

  • 8 aweet mini peppers
  • 1 small to medium Persian cucumber
  • 1 teaspoon of everything bagel seasoning blend
  • 1 teaspoon spicy chili crisp (personally obsessed with this bestselling spicy chili crisp option)
  • 1 tablespoon ginger dressing

Instructions

  • In a bowl, combine the cucumbers, peppers, everything seasoning, chili crisp, and ginger dressing.
  • Toss to combine
