Turkey Meatloaf

Ingredients:

  1. cooking spray – 1 spray
  2. olive oil – 1 tbs
  3. uncooked onions – 1/2 small, finely chopped
  4. uncooked carrots- 2 medium, coarsely shredded
  5. fresh baby spinach – 5 oz (1package)
  6. uncooked zucchini -1 medium, coarsely shredded
  7. garlic cloves – 3 medium cloves, minced
  8. rosemary – 2 tsp, fresh, minced
  9. eggs – 1 large egg
  10. dijon mustard – 2 tbsp
  11. worcestershire sauce – 2 tbsp
  12. table salt – 1/2 tsp
  13. black pepper- 1/4 tsp
  14. uncooked 99% fat-free ground turkey breast – 1 pound
  15. uncooked quick oats – 1 cup or old-fashioned oats
  16. canned tomato sauce – 1 cup (homemade)
Instruction:
  1. preheat oven to 375f. line large rimmed baking sheet with foil. spray foil with nonstick spray
  2. heat oil in large skillet over medium-high heat. add onion and cook, strirring often, intil onion begins to soften, about 3 minutes. add carrots, spinach, zucchini, garlic, and rosemary. cover and cook, stirring occasionally, until vagatables soften, about 3 minutes. drain and transfer to large shallow dish to cool slightly.
  3. whisk together egg, mustard, worcastershire sauce, salt and pepper in large bowl. add turkey, oats and vegetable mixtture and stir to mix well.
  4. trasfer mixture to baking pan and form into a loaf. bake until instant-read thermomater inserted into center of meat loaf regisers 165f about 50 minutes. half way through baking, too with tomato sauce
  5. cut loaf into 12 slices , serving size 2 slices 2 w-w points
