2 tablespoons granulated sweetener (such as Splenda or Stevia)
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon

Instructions:
Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with muffin liners or spraying it with non-stick cooking spray.
In a mixing bowl, combine the self-rising flour, Greek yogurt, sweetener, vanilla extract, ground cinnamon, and egg. Mix until well combined and a smooth batter forms.
Divide the batter evenly among the muffin cups in the prepared tin.
If desired, sprinkle a little extra sweetener on top of each muffin for added sweetness.
Bake in the preheated oven for 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
