Two Point Cinnamon Muffin

Ingredients:

  • 1/2 cup self-rising flour
  • 1/2 cup plain non-fat Greek yogurt
  • 2 tablespoons granulated sweetener (such as Splenda or Stevia)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 egg
  • Optional: additional sweetener for sprinkling on top

Instructions:

  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with muffin liners or spraying it with non-stick cooking spray.
  2. In a mixing bowl, combine the self-rising flour, Greek yogurt, sweetener, vanilla extract, ground cinnamon, and egg. Mix until well combined and a smooth batter forms.
  3. Divide the batter evenly among the muffin cups in the prepared tin.
  4. If desired, sprinkle a little extra sweetener on top of each muffin for added sweetness.
  5. Bake in the preheated oven for 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  6. Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  7. Once cooled, enjoy your delicious two-point cinnamon muffins!
