WW Turtle Candy with Pecans and Caramel (Lightened-Up Version)
Ingredients (makes 12 servings):
36 pecan halves (about 3 pecans per candy)
12 pieces of WW-friendly soft caramel (like Werther’s Sugar-Free Soft Caramels or homemade light caramel)
1–2 teaspoons unsweetened almond milk (or fat-free milk)
½ cup Lily’s no-sugar-added chocolate chips (or any WW-friendly dark chocolate chips)
Optional: a pinch of sea salt or Maldon flakes
Instructions:
Arrange Pecans:
On a parchment-lined tray, place 3 pecan halves per candy in a small cluster (one “head,” two “legs”).
Melt Caramel:
In a small microwave-safe bowl, melt caramels with a teaspoon of almond milk. Microwave in 15–20 second intervals, stirring until smooth.
Top with Caramel:
Spoon a small amount (about 1 teaspoon) of the melted caramel onto each pecan cluster.
Melt Chocolate:
Melt the chocolate chips in a separate bowl in 20-second intervals until smooth.
Finish with Chocolate:
Spoon about ½–1 teaspoon of melted chocolate over the caramel.
Optional: Add Sea Salt:
Sprinkle a tiny pinch of sea salt over each candy for contrast.
Set and Store:
Let the candies set in the fridge for 15–20 minutes. Store in an airtight container in the fridge.
