0 Point Crustless Quiche


  • 1 dozen eggs
  • ½ cup fat free Greek yogurt
  • 1 red onion, diced
  • 8 fresh mushrooms, sliced
  • 1 tomato, diced
  • 2/3 cup frozen hash browns
  • 1 cup fat free cottage cheese
  • Handful (or 2) fresh spinach leaves
  • Salt and pepper to taste
  • Cooking spray


  1. Beat eggs with yogurt until well combined.
  2. Add onion, mushrooms, tomato, hash browns, cottage cheese, spinach, salt, and pepper.
  3. Spray two quiche pans or pie plates with cooking spray.
  4. Divide egg mixture evenly between the two pans.
  5. Bake in preheated 350-degree oven for about 45 minutes, until puffed and slightly browned, and the liquid is no longer visible.
