📝 Ingredients:
1.5 to 2 lbs boneless, skinless chicken breasts
1 cup salsa (choose sugar-free or no-added-sugar for 0 points)
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
Salt & pepper, to taste
Optional: 1/4 cup fat-free plain Greek yogurt (to mix in for creaminess — still 0 Points®)
Optional toppings: chopped cilantro, lime juice, diced red onion
👩🍳 Instructions:
Add to Crock Pot:
Place chicken breasts in the slow cooker.
Pour salsa over the top and sprinkle with cumin, garlic powder, onion powder, salt, and pepper.
Cook:
On low for 4–6 hours
Or on high for 2–3 hours
Until chicken is cooked through and shreds easily.
Shred & Mix:
Remove chicken, shred with two forks, then return to slow cooker and mix with the salsa juices.
