Apple Cinnamon Coffee Cake

  • 1 pkg. sugar-free white cake mix (2 layers)
  • 1 tsp ground cinnamon
  • 1 cup fat-free sour cream
  • 3 eggs
  • 1/4 cup water
  • 1 (21 oz) can no-sugar-added apple pie filling


  • 1 cup powdered sugar substitute
  • 1-1 1/2 Tbsp. unsweetened almond milk or skim milk


  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the sugar-free cake mix, ground cinnamon, fat-free sour cream, eggs, and water. Mix with a mixer until smooth.
  3. Pour the batter into a greased 9 x 13 inch baking dish.
  4. Spoon the no-sugar-added apple pie filling on top of the batter, covering the entire surface.
  5. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  6. In a small bowl, mix the powdered sugar substitute and almond milk to create the glaze.
  7. Once the cake has cooled, drizzle the glaze over the top.
