Ingredients:
- 2 large eggs
- 2 slices of bacon
- 1/4 cup shredded cheddar cheese
- 1/4 of an avocado
- 1 low-carb tortilla
- Salt and pepper to taste
- Cooking spray or butter
Instructions:
- In a frying pan, cook the bacon over medium heat until crispy. Remove the bacon from the pan and set aside on a paper towel to cool.
- In a small bowl, whisk the eggs with salt and pepper to taste.
- Using the same pan that you cooked the bacon in, pour in the eggs and cook over medium heat, stirring occasionally, until the eggs are cooked through and no longer runny.

- Fold the sides of the tortilla towards the center and then roll it up.
