Ingredients:

  • 4 large potatoes, washed and scrubbed
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, chopped)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Slice the potatoes into wedges or cubes, depending on your preference.
  3. In a large bowl, combine the olive oil, minced garlic, dried rosemary, grated Parmesan cheese, salt, and pepper. Mix well.
  4. Add the potato wedges or cubes to the bowl and toss them until they are evenly coated with the garlic Parmesan mixture.
