Ingredients:
- 4 large potatoes, washed and scrubbed
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, chopped)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 400°F (200°C).
- Slice the potatoes into wedges or cubes, depending on your preference.
- In a large bowl, combine the olive oil, minced garlic, dried rosemary, grated Parmesan cheese, salt, and pepper. Mix well.
- Add the potato wedges or cubes to the bowl and toss them until they are evenly coated with the garlic Parmesan mixture.
- Place the coated potatoes on a baking sheet in a single layer, ensuring they are not crowded.
- Bake in the preheated oven for about 30-40 minutes or until the potatoes are golden brown and crispy on the outside, and tender on the inside. Flip the potatoes halfway through the baking time to ensure even cooking.
- Once the potatoes are done, remove them from the oven and sprinkle with additional grated Parmesan cheese and chopped fresh parsley for garnish.
- Serve the baked garlic Parmesan potatoes hot as a side dish to complement your main course.
