📝 Ingredients:
2 cups old-fashioned oats
1/4 cup unsweetened cocoa powder
1 tsp baking powder
1/2 tsp salt
1 3/4 cups unsweetened almond milk (or skim milk)
1/3 cup unsweetened applesauce
1 egg (or 1/4 cup egg whites for lower points)
1/4 cup zero-calorie sweetener (e.g., monk fruit, stevia)
1 tsp vanilla extract
1/2 tsp almond extract (optional but recommended)
1 cup pitted chopped cherries (fresh or frozen, thawed & drained)
2 Tbsp mini chocolate chips or chopped dark chocolate
👩🍳 Instructions:
Preheat Oven:
Preheat to 350°F (175°C). Lightly spray an 8×8 baking dish with non-stick spray.
Mix Dry Ingredients:
In a large bowl, combine oats, cocoa powder, baking powder, and salt.
Mix Wet Ingredients:
In another bowl, whisk together milk, applesauce, egg, sweetener, vanilla, and almond extract.
Combine:
Pour the wet mixture into the dry ingredients and stir until well combined. Gently fold in cherries and chocolate chips.
Bake:
Pour mixture into the prepared baking dish and bake for 35–40 minutes, or until set in the center and slightly crisp on top.
