Ingredients:

2 cups rolled oats

1/3 cup cocoa powder

1/2 cup brown sugar (adjust according to taste)

1 teaspoon baking powder

1/2 teaspoon salt

2 cups milk (dairy or non-dairy)

2 large eggs

1/3 cup melted butter or oil

1 teaspoon vanilla extract

1/2 cup dried cherries or fresh pitted cherries

1/2 cup dark chocolate chips or chunks

Optional: Whipped cream or vanilla yogurt for serving
Instructions:

Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easier cleanup.

In a large mixing bowl, combine the rolled oats, cocoa powder, brown sugar, baking powder, and salt. Mix well to combine.

In another bowl, whisk together the milk, eggs, melted butter or oil, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Fold in the dried cherries and dark chocolate chips/chunks until evenly distributed throughout the mixture.

Pour the mixture into the prepared baking dish and spread it out evenly.

Bake in the preheated oven for 30-35 minutes, or until the oatmeal is set and the edges are slightly crispy.

Remove from the oven and let it cool for a few minutes before serving.
