1 lb (450g) boneless, skinless chicken breasts, cooked and shredded
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup chopped green onions
2 cloves garlic, minced
1/4 cup chopped parsley
2 large eggs
1/4 cup all-purpose flour

Instructions:
Prepare the Chicken:
Cook the chicken breasts by boiling, baking, or grilling them until fully cooked. Then shred the chicken using two forks or by pulsing in a food processor until shredded.
Mix Ingredients:
In a large mixing bowl, combine the shredded chicken, cheddar cheese, Parmesan cheese, chopped green onions, minced garlic, chopped parsley, eggs, and all-purpose flour. Mix well until all ingredients are evenly combined.
Season:
Season the mixture with salt and pepper to taste. Remember that the cheese can add some saltiness, so taste the mixture before adding too much salt.
Form Fritters:
Heat a skillet over medium heat and add enough olive oil to coat the bottom of the skillet.
Take a spoonful of the chicken mixture and form it into a small patty or fritter shape. Place it onto the skillet. You can adjust the size of the fritters according to your preference.
Cook:
Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. Make sure to cook them in batches to avoid overcrowding the skillet.
Serve:
Once the fritters are cooked through and crispy on the outside, remove them from the skillet and place them on a plate lined with paper towels to drain any excess oil.
