Easy Skinny Cowboy Caviar


  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) diced tomatoes, drained
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 1/4 cup chopped fresh cilantro
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • Salt and pepper to taste


  1. In a large mixing bowl, combine the black beans, corn, diced tomatoes, red onion, red bell pepper, green bell pepper, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the bean and vegetable mixture, and toss until everything is well coated.
  4. Refrigerate the Skinny Cowboy Caviar for at least 30 minutes to allow the flavors to meld together.
  5. Serve chilled as a dip with tortilla chips, as a topping for grilled chicken or fish, or as a side salad.
