Ingredients:

1 lb (450g) lean ground turkey or extra lean ground beef

1 small onion, chopped

1 bell pepper, chopped

1 packet of low-sodium taco seasoning mix

1 can (15 oz) of no-sugar-added tomato sauce

1 can (15 oz) of no-salt-added diced tomatoes

1 can (15 oz) of reduced-sodium kidney beans, drained and rinsed

1 cup (100g) reduced-fat shredded cheddar cheese

3 cups (90g) baked tortilla chips, crushed (choose a brand with low points)
Instructions:

Preheat your oven to 350°F (175°C)

In a large skillet over medium heat, cook the ground turkey or beef until it’s no longer pink. Drain any excess fat.

Add the chopped onion and bell pepper to the skillet and cook until they’re softened.

Stir in the taco seasoning mix, tomato sauce, diced tomatoes, and kidney beans. Let it simmer for about 5 minutes.

Spray a 9×13-inch baking dish with non-stick cooking spray.

Spread half of the crushed tortilla chips evenly in the bottom of the baking dish.

Spoon the meat mixture over the chips, spreading it out evenly.

Sprinkle half of the shredded cheese over the meat mixture.

Layer the remaining crushed tortilla chips on top, followed by the rest of the shredded cheese.

Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
